Prioritize recordings over notes. Notes have embedded bias from the note-taker (not a bad thing, just a thing). If you only have notes after, it’s like having a quantitative model but absolutely no raw data. Not the best spot to be in. You can always take notes after with a recording, and then anyone else who wasn’t there can also take notes.
